MADRID WITH A FULL BELLY, ROUTE THROUGH THE MOST TYPICAL DISHES OF THE CITY.

Yes, it's great to walk around the city center, visit the best monuments and its viewpoints... but where to eat? what to eat? We suggest some of the most emblematic dishes and bars in Madrid. Are you coming?

The cocido madrileño is a must, but which one is the best? La Casa Carola serves one of the best cocido in Madrid and it's an open bar. Yes, yes, just as you hear it, open bar of cocido! Here you will be served the food like at home: with the wine in a clay jug and the dish on a red and white checkered tablecloth. This is the specialty of the house. At Calle de Padilla number 54.

As you can see, this is not about light dishes. Our next proposal is some callos a la madrileña. It is a dish that traditionally thought for the winter months, when the cold presses in the streets of the city but if you are curious it is served throughout the year. It is so well known that during the month of November is celebrated as Callos Month in Madrid. La Tasqueria has recently received a Michelin star for this dish, so we can say, without much room for error, that it is one of the best places to enjoy it. The man in charge of this recipe at La Tasqueria prepares it just as he was taught by his teacher, Julio Reoyo (El Meson de Doña Filo). All this in Calle Duque de Sesto, number 48.

Another obligatory "classic" is the famous calamari sandwich. You cannot leave without trying it. It is a much simpler dish than the previous ones and much lighter. In the heart of Madrid is the Cervecería Sol Mayor (Calle Postas, 5) halfway between Puerta del Sol and Plaza Mayor is one of the best places to take a break and enjoy a drink and snack at an affordable price. Also in the vicinity of the Plaza Mayor you will find several bars specializing in this delicacy.

Starry eggs are another typical Madrilenian dish. And as in a game of questions and answers, if someone says "huevos estrellados" the next one says "Casa Lucio". It couldn't be any other way. With the infallible impulse of top quality ingredients, Casa Lucio (Cava Baja, 35) is one of the most recommended restaurants to enjoy good huevos madrileños.

Last but not least, gallinejas is a recipe that is made with fried lamb tripe and is the only dish that is only consumed in Madrid. It is a dish for the bravest, we know... if you are one of those who like to try everything we recommend you to go to Calle de Embajadores number 84 where you will find one of the most traditional places in the capital, whose owners have published a book entitled "Las Gallinejas". This dish, as the authors explain, is of extremely humble origin, when the needy used to go to the surroundings of the Puerta de Toledo slaughterhouse to see what they could take advantage of the leftovers that others threw away. In this restaurant they were pioneers in disseminating recipes based on offal and it is a good place to eat them.
